This recipe was first tried at a company luncheon and has been a favorite every since. I thought it was ham salad imagine my surprise when I was told what was in it. Thanks to my friend Carole for sharing.

Ingredients

  • 1 box
    cornbread mix cooked and crumbled
  • 1 large
    onion, chopped
  • 1 medium
    bell pepper, chopped
  • 2 medium
    tomatoes, chopped
  • 6 slice
    bacon, cooked and crumbled
  • 1 pt
    mayonaise

How to Make Cornbread Salad

Step-by-Step

  1. Make Cornbread according to box instructions. When cool-crumble. Add cooked and crumbled bacon( or use bacon bits). Add all additional ingredients (optional-1 chopped jalapeno). Moisten all with Mayonaise. Probably will use 1 pint or more.
  2. This is great with pinto beans! Taste like ham salad. Enjoy!
