Who but Southerners would think of a salad made with cornbread, but it sure is good. You really need to try this sometime.

Ingredients

  • CORNBREAD:
  • 1 tablespoon canola oil
  • 3 cups buttermilk
  • 2 - eggs
  • 2 cups yellow cornmeal
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup chopped jalapeno peppers
  • DRESSING:
  • 1 package ranch style dressing mix
  • 8 ounces sour cream
  • 1 cup mayonnaise
  • SALAD INGREDIENTS:
  • 1 - recipe cornbread, crumbled
  • 2-16 ounces cans pinto beans, drained
  • 3 cups shredded cheddar cheese
  • 3 large tomatoes, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup green onions, chopped
  • 1/2 cup chopped green chili peppers
  • 1 1/2 cups cooked bacon pieces
  • 1 can corn, drained

How To Make cornbread salad

  • Step 1
    Make corn bread and let cool.
  • Step 2
    Meanwhile, combine ranch dressing mix, sour cream and mayonnaise in a bowl; set aside.
  • Step 3
    When cool place half of he the cornbread, crumbled, in the bottom of a large serving bowl.
  • Step 4
    Top with 1 can drained pinto beans. Follow with 1/2 of each of the cheese, tomatoes, bell peppers, green onions , chili peppers, bacon, corn and dressing mixture.
  • Step 5
    Repeat, ending with the dressing mixture. Cover and chill at least 2 hours before serving.
  • Step 6
    This is a great dish to take to pot lucks, fellowship dinners or family reunions.
