Who but Southerners would think of a salad made with cornbread, but it sure is good. You really need to try this sometime.

Ingredients
- CORNBREAD:
- 1 tablespoon canola oil
- 3 cups buttermilk
- 2 - eggs
- 2 cups yellow cornmeal
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/2 cup chopped jalapeno peppers
- DRESSING:
- 1 package ranch style dressing mix
- 8 ounces sour cream
- 1 cup mayonnaise
- SALAD INGREDIENTS:
- 1 - recipe cornbread, crumbled
- 2-16 ounces cans pinto beans, drained
- 3 cups shredded cheddar cheese
- 3 large tomatoes, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup green onions, chopped
- 1/2 cup chopped green chili peppers
- 1 1/2 cups cooked bacon pieces
- 1 can corn, drained
How To Make cornbread salad

Step 1Make corn bread and let cool.

Step 2Meanwhile, combine ranch dressing mix, sour cream and mayonnaise in a bowl; set aside.

Step 3When cool place half of he the cornbread, crumbled, in the bottom of a large serving bowl.

Step 4Top with 1 can drained pinto beans. Follow with 1/2 of each of the cheese, tomatoes, bell peppers, green onions , chili peppers, bacon, corn and dressing mixture.

Step 5Repeat, ending with the dressing mixture. Cover and chill at least 2 hours before serving.

Step 6This is a great dish to take to pot lucks, fellowship dinners or family reunions.
