I first tasted this salad at a carry-in at the school where I worked. The teacher that brought it said she just made a small bowl since she had never tried it before. Well, it was so tasty we were fighting for the last bite. Everyplace I take this salad, I am asked for the recipe!! It tastes like a BLT sandwich!!!

Ingredients

  • 1 box
    cornbread mix baked & cooled
  • 1 small
    onion chopped
  • 2 or 3
    roma tomatoes chopped
  • 1/4 c
    real bacon bits
  • ·
    real mayonnaise add just enough for dressing consistency

How to Make Cornbread Salad

Step-by-Step

  1. crumble up cooled cornbread and place in medium sized bowl.
  2. Add onion,tomatoes,and bacon. Stir in mayonnaise a little at a time until the salad has dressing consistency. ( too much mayo makes this too soupy)
  3. Refrigerate and enjoy!!
