Fresh Corn Salad

Staying with the Hipps was a childhood memory from before I was 7. Sandy and Dave always welcomed us with open arms. Visiting with them from the cottage one summer, Sandy made this incredible salad. It wasn't her hot German Potato salad (which I never got the recipe for to my regret), but this sure made me smile when she shared it with me!

Ingredients

  •   4 c
    canned corn (or 5 ears fresh, boiled and cut from cob)
  •   1 medium
    purple onion, diced
  •   3 Tbsp
    cider vinegar
  •   3 Tbsp
    oil
  •  
    chopped fresh basil, optional

How To Make

  • 1
    Put cold corn into mixing bowl. Add diced onion to taste. Add vinegar and oil and mix well. Just before serving, add chopped fresh basil if you desire.
