corn, edamame and bean salad
I like any kind of bean salad - so healthy!! A friend recently served a salad with edamame which I more or less recreated here.

Ingredients
- 2 cups frozen corn, thawed
- 1 cup shelled edamame
- 15 ounces can garbanzo beans, drained and rinsed (or white beans)
- 1 roma tomato, seeded and chopped
- 1 clove garlic, grated
- 1 cup sweet onion, chopped
- 1/4 cup cilantro, chopped
- 1 - lime, juice of
- 1/4 cup vinaigrette dressing (italian, or greek dressing are ok)
- salt and pepper, to taste
How To Make corn, edamame and bean salad

Step 1Mix together all ingredients, taste for salt and pepper.
