corn, edamame and bean salad

I like any kind of bean salad - so healthy!! A friend recently served a salad with edamame which I more or less recreated here.

Ingredients For corn, edamame and bean salad

  • 2 c
    frozen corn, thawed
  • 1 c
    shelled edamame
  • 15 oz
    can garbanzo beans, drained and rinsed (or white beans)
  • 1
    roma tomato, seeded and chopped
  • 1 clove
    garlic, grated
  • 1 c
    sweet onion, chopped
  • 1/4 c
    cilantro, chopped
  • 1
    lime, juice of
  • 1/4 c
    vinaigrette dressing (italian, or greek dressing are ok)
  • salt and pepper, to taste

How To Make corn, edamame and bean salad

    Mix together all ingredients, taste for salt and pepper.

    Chill for at least one hour before serving.
