corn, edamame and bean salad

I like any kind of bean salad - so healthy!! A friend recently served a salad with edamame which I more or less recreated here.

Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup shelled edamame
  • 15 ounces can garbanzo beans, drained and rinsed (or white beans)
  • 1 roma tomato, seeded and chopped
  • 1 clove garlic, grated
  • 1 cup sweet onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 - lime, juice of
  • 1/4 cup vinaigrette dressing (italian, or greek dressing are ok)
  • salt and pepper, to taste

How To Make corn, edamame and bean salad

  • Step 1
    Mix together all ingredients, taste for salt and pepper.
  • Step 2
    Chill for at least one hour before serving.
