1Put the corn bread cubes in a large salad bowl. Mix the tomatoes, cucumber, sweet onion, bell pepper, bacon and pickle relish in a separate bowl. Add to the corn bread. Mix the mayonnaise and pickle juice in a small bowl. Pour over corn bread mixture and toss to coat. Sprinkle with the Parmesan cheese and green onions. Refrigerate until ready to serve. Makes 10 to 12 servings.
