Ingredients For corn bread salad

  • 5 cups cubed corn bread
  • 3 cups chopped fresh roma tomatoes
  • 1 cup chopped cucumber
  • 1 cup chopped sweet onion
  • 1 cup chopped green bell pepper
  • 1 pound bacon, crisp cooked, crumbled
  • 1/4 cup sweet pickle relish
  • 1 cup mayonnaise or sour cream
  • 1/4 cup sweet pickle juice
  • shredded parmesan cheese
  • 1 bunch green onions, chopped

How To Make corn bread salad

  • 1
    Put the corn bread cubes in a large salad bowl. Mix the tomatoes, cucumber, sweet onion, bell pepper, bacon and pickle relish in a separate bowl. Add to the corn bread. Mix the mayonnaise and pickle juice in a small bowl. Pour over corn bread mixture and toss to coat. Sprinkle with the Parmesan cheese and green onions. Refrigerate until ready to serve. Makes 10 to 12 servings.
