This is an unusual cornbread salad with lime dressing. It's from Lone Star to Five Star

3 tbsp. olive oil
1 tbsp. white vinegar
6 tbsp.fresh lime juice


3 cups dried cornbread, cut into chunks or crumbled
1/2 red bell pepper, chopped
1/2 green bell pepper chopped
1/2 red onion, chopped
4 green onions, chopped
1 can chopped green chiles, drained, 4 oz
4 garlic cloves, minced
1/4 cup chopped fresh cilantro
1 tbsp. cumin seeds
salt and cracked pepper to taste


1To make the dressing, mix the olive oil, vinegar and lime juice in small bowl and whisk to blend well.
2. To make the salad, mix the corn bread, red bell pepper, green bell pepper, red onion, green onions, green chiles, garlic and cilantro in large bowl and mix lightly. Add the cumin seeds, salt and pepper and toss. Add the dressing and toss to coat evenly. Serve at once. Serves 6 to 8
