I received this recipe from a lady I worked with years ago and it is still one of my favorites.

Ingredients

  • 1
    bell pepper,chopped
  • 1
    onion, chopped
  • 2
    tomatoes, chopped
  • 2 c
    cooked ham, cubed in bite size pieces
  • 1/3 c
    sweet pickle relish
  • 1 c
    mayonnaise
  • 1 box
    jiffy corn bread mix

How to Make Corn Bread Salad

Step-by-Step

  1. Cook Jiffy corn bread according to direction on box. When bread is cool cut into cubes. Combine all other ingredients in large bowl. Place corn bread in bottom of casserole dish, top with tomato mixture. I usually just mix it all together even the corn bread.
