Ingredients

  • 2 c
    cherry tomatoes quartered
  • 2 1/2 c
    fresh corn kernals (raw or grilled) approx: 5 med ears.
  • 1 small
    red onions peeled diced
  • 1/3 c
    ranch dressing
  • 1 medium
    head of butter lettuce
  • 4 Tbsp
    freshly chopped basil
  • ·
    sea salt and pepper to taste
  • Opt. 1/3 c
    bell pepper (petite diced)

How to Make Corn and Tomato Salad

Step-by-Step

  1. In a bowl combine tomatoes, corn and onion. Sprinkle with sea salt and pepper.
  2. Stir in ranch dressing and toss.
  3. Arrange lettuce leaves into a cup shape.
  4. Spoon mixture into each lettuce cup and sprinkle with chopped basil. Enjoy!!!
