Ingredients
- 2 cups Corn, roasted on grill (4 ears) and cut off cob
- 1 large Red Pepper, chopped
- 1/2 cup green onions, sliced thin
- 1/2 cup Fresh Cilantro, chopped
- 1 can black beans, rinsed and drained
- 1/4 cup red wine vinegar
- 1 teaspoon Sugar
- 2 teaspoons canola oil
- 2 cloves Garlic, chopped
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
How To Make corn and black bean salad

Step 1Combine corn, red pepper, onions, cilantro and beans in bowl.

Step 2Combine vinegar and remaining ingredients in small bowl.

Step 3Drizzle vinegar mixture over corn mixture and stir to mix.

Step 4Cover and chill for 30 minutes.
