Ingredients

DRESSING:
-
116 ounce container low fat (or fat free) sour cream

3 Tbsplow fat mayonnaise

11.4 ounce envelope vegetable soup mix (i use knorr)

1 tspdill, dried

SALAD:
-
1 largecucumber, peeled, seeded and chopped

1/2 cchopped red bell pepper
-
1/2 cchopped yellow bell pepper
-
1/2 cchopped orange bell pepper
-
1/4 csweet onion, diced
-
1 ptgrape tomatoes, rinsed and drained
How to Make Cool & Creamy Cucumber & Pepper Salad
- In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
- In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
- Transfer to a large bowl. Cover and refrigerate at least one hour.
