Cool & Creamy Cucumber & Pepper Salad

My grandmother used to make cucumber salad with cucumbers, onions, sour cream, vinegar, sugr salt and pepper. I always loved this salad and one day came up with this light variation of her delicious salad.

    16 ounce container low fat (or fat free) sour cream
  • 3 Tbsp
    low fat mayonnaise
  • 1
    1.4 ounce envelope vegetable soup mix (i use knorr)
  • 1 tsp
    dill, dried
  • SALAD:

  • 1 large
    cucumber, peeled, seeded and chopped
  • 1/2 c
    chopped red bell pepper
  • 1/2 c
    chopped yellow bell pepper
  • 1/2 c
    chopped orange bell pepper
  • 1/4 c
    sweet onion, diced
  • 1 pt
    grape tomatoes, rinsed and drained

How to Make Cool & Creamy Cucumber & Pepper Salad


  1. In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
  2. In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
  3. Transfer to a large bowl. Cover and refrigerate at least one hour.
