cool & creamy cucumber & pepper salad

My grandmother used to make cucumber salad with cucumbers, onions, sour cream, vinegar, sugr salt and pepper. I always loved this salad and one day came up with this light variation of her delicious salad.

Ingredients

  • DRESSING:
  • 1 - 16 ounce container low fat (or fat free) sour cream
  • 3 tablespoons low fat mayonnaise
  • 1 - 1.4 ounce envelope vegetable soup mix (i use knorr)
  • 1 teaspoon dill, dried
  • SALAD:
  • 1 large cucumber, peeled, seeded and chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped orange bell pepper
  • 1/4 cup sweet onion, diced
  • 1 pint grape tomatoes, rinsed and drained

How To Make cool & creamy cucumber & pepper salad

  • Step 1
    In a medium size bowl, combine all of the dressing ingredients. Mix well and set aside.
  • Step 2
    In a large bowl, combine all of the salad ingredients. Add the prepared dressing and toss gently to combine.
  • Step 3
    Transfer to a large bowl. Cover and refrigerate at least one hour.
