  • 1 head green cabbage
  • 1 head red cabbage
  • 3/4 cup Kosher salt
  • 1 cup scallions, large chop
  • 2 cups sliced carrots
  • 1 cup sliced daikon radish
  • 6 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 750 milliliters fish sauce
  • 2 tablespoons shrimp paste
  • 1 tablespoon rice vinegar
  • 1/4 cup Korean chili powder
  • 2 tablespoons Gochujang sauce

  • Step 1
    Chop the cabbages.
  • Step 2
    Layer in a bowl, adding salt between the layers.
  • Step 3
    Place in the fridge overnight.
  • Step 4
    Drain the cabbages and rinse well. Add the remaining ingredients.
  • Step 5
    Place in jars and let sit on the counter for 1 day. Store in the fridge for another week; then it's ready to eat.
