    head red cabbage
  • 3/4 c
    Kosher salt
  • 1 c
    scallions, large chop
  • 2 c
    sliced carrots
  • 1 c
    sliced daikon radish
  • 6 clove
    garlic, minced
  • 2 Tbsp
    grated ginger
  • 750 ml
    fish sauce
  • 2 Tbsp
    shrimp paste
  • 1 Tbsp
    rice vinegar
  • 1/4 c
    Korean chili powder
  • 2 Tbsp
    Gochujang sauce

How To Make colorful homemade kimchi

    Chop the cabbages.

    Layer in a bowl, adding salt between the layers.

    Place in the fridge overnight.

    Drain the cabbages and rinse well. Add the remaining ingredients.

    Place in jars and let sit on the counter for 1 day. Store in the fridge for another week; then it's ready to eat.
