Ingredients

  • 2 Tbsp
    whole-grain mustard
  • 2 Tbsp
    cider vinegar
  • 1/4 c
    vegetable oil
  • 1/4 c
    mayonnaise
  • 1 Tbsp
    sugar
  • 1/2 tsp
    celery seeds
  • ·
    salt and pepper to taste
  • 1
    stalk celery, diced 1/4 inch
  • 1/2
    large red bell pepper, diced 1/4 inch
  • 1
    medium red onion, finely chopped
  • 3 c
    defrosted frozen corn
  • 4 oz
    monterey jack cheese, cubed small
  • 2 Tbsp
    chopped parsley
  • ·
    few drops hot pepper sauce, to taste
  • ·
    optional lettuce leaves for garnish

How to Make Colorful Corn Salad

Step-by-Step

  1. Combine mustard and vinegar in a large bowl.
  2. Add oil in a steady stream, whisking continuously until blended.
  3. Stir in mayonnaise, sugar, celery seeds, salt and pepper.
  4. Add celery, pepper, onion, corn, cheese and parsley.
  5. Toss well; add hot sauce, taste to adjust seasoning.
  6. Line a bowl with lettuce leaves (radicchio makes a colorful red border) for garnish.
