Ingredients

  • 2 tablespoons whole-grain mustard
  • 2 tablespoons cider vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup mayonnaise
  • 1 tablespoon sugar
  • 1/2 teaspoon celery seeds
  • - salt and pepper to taste
  • 1 - stalk celery, diced 1/4 inch
  • 1/2 - large red bell pepper, diced 1/4 inch
  • 1 - medium red onion, finely chopped
  • 3 cups defrosted frozen corn
  • 4 ounces monterey jack cheese, cubed small
  • 2 tablespoons chopped parsley
  • - few drops hot pepper sauce, to taste
  • - optional lettuce leaves for garnish

How To Make colorful corn salad

  • Step 1
    Combine mustard and vinegar in a large bowl.
  • Step 2
    Add oil in a steady stream, whisking continuously until blended.
  • Step 3
    Stir in mayonnaise, sugar, celery seeds, salt and pepper.
  • Step 4
    Add celery, pepper, onion, corn, cheese and parsley.
  • Step 5
    Toss well; add hot sauce, taste to adjust seasoning.
  • Step 6
    Line a bowl with lettuce leaves (radicchio makes a colorful red border) for garnish.
