Ingredients
- 2 tablespoons whole-grain mustard
- 2 tablespoons cider vinegar
- 1/4 cup vegetable oil
- 1/4 cup mayonnaise
- 1 tablespoon sugar
- 1/2 teaspoon celery seeds
- - salt and pepper to taste
- 1 - stalk celery, diced 1/4 inch
- 1/2 - large red bell pepper, diced 1/4 inch
- 1 - medium red onion, finely chopped
- 3 cups defrosted frozen corn
- 4 ounces monterey jack cheese, cubed small
- 2 tablespoons chopped parsley
- - few drops hot pepper sauce, to taste
- - optional lettuce leaves for garnish
