This coleslaw will add a burst of color to your plate, just like the colors of the Junkanoo festival. Coleslaw is a regular side dish on many Bahamian tables.

Ingredients

  • 1 small
    cabbage, finely shredded
  • 1/4 small
    red cabbage, finely shredded
  • 1 medium
    carrot, grated
  • 1 small
    onion, small dice
  • 1/4 c
    raisins, optional
  • 1 tsp
    lemon juice
  • 1/4 tsp
    sugar
  • ·
    salt, to taste
  • 2 Tbsp
    mayonnaise (to 3t)
  • ·
    apple, diced, optional

How to Make Coleslaw

Step-by-Step

  1. Combine cabbage, carrots, onion and raisins in a large bowl.
  2. Sprinkle sugar, salt and lemon juice into a small bowl.
  3. Add mayonnaise and mix until blended. Chill in the refrigerator for at least 10 minutes; mix before serving.
  4. To add a little more fiesta chop an apple into fine
    pieces and add to the mixture.
