cold soba noodle salad
This recipe is from Pasta Revolution by America's Test Kitchen. I served this to my three girlfriends for a luncheon and it was a big smash! The chicken on the side with homemade bread sticks made this meal complete. This recipe will serve four adults.

Ingredients
- 14 ounces dried soba noodles
- 1 tablespoon salt
- 1/2 teaspoon grated fresh ginger
- 1 tablespoon vegetable oil
- 1/4 cup soy sauce
- 3 tablespoons mirin
- 1/2 teaspoon sugar
- 1/4 teaspoon wasabi paste or powder
- 4 large red radshes, trimmed and shredded
- 2 large green onions cut on the bias
- 1 sheet nori, cut into matchstick slices
- 1/4 cup (opt) bonito flakes
- 4 small (opt) chicken breast
How To Make cold soba noodle salad

Step 1*Bring 4 quarts water to boil in large pot. *Add noodles and salt and cook, stirring often, until tender. *Drain noodles, rinse with cold water, and drain again, leaving noodles slightly wet. *Transfer to large bowl and toss with oil.

Step 2*Whisk soy sauce, MIRIN, sugar, ginger, and wasabi together in small bowl, then pour over noodles. *Add radishes and green onions *Toss until well combined. *Sprinkle individual portions with nori and bonito flakes, if using.

Step 3NOTE: I sautéed some chicken breast in butter, sliced and put on the plate with the noodles...great luncheon with my friends!
