cold cucumber salad

This recipe comes to you courtesy of Trisha Yearwood who I find to be a down to earth - cooks like my mom - chef.

Ingredients

  • 1 teaspoon salt
  • 1 cup white vinegar
  • 1-1/2 cup sugar
  • 1 teaspoon celery seed
  • 1/4 cup vegetable oil
  • 5 cups cucumber slices (small kirby or thin cukes work best)
  • 1 medium sweet onion, thinly sliced
  • 1 large yellow bell pepper,thinly sliced

How To Make cold cucumber salad

  • Step 1
    Bring the salt, vinegar, sugar, celery seed and veg.oil to a boil in med. saucepan. Remove the pan from the heat and allow to cool.
  • Step 2
    In large bowl, toss the sliced cukes, onions and peppers with the liquid mixture and refrigerate for at least 2 hrs.or up to next day. Serve cold.
