If you are traveling with this dish, use the corn partially thawed. If you are serving immediately, use corn completely thawed. This is a good alternative to potato salad at cookouts.

Ingredients

  • 1 bag frozen corn, partially thawed
  • 2 bunches green onions, chopped
  • 6 slices bacon, fried crisp and crumbled
  • 1 cup colby cheese, grated
  • 2 - jalapeno peppers, seeded and chopped
  • 1 cup peppercorn ranch dressing
  • 1 clove garlic, crushed

How To Make cold corn salad

  • Step 1
    In a large mixing bowl, combine all chopped vegetables with frozen corn.
  • Step 2
    Stir in the dressing to coat vegetables well.
  • Step 3
    Stir in grated cheese. Sprinkle crumbled bacon on top.
  • Step 4
    The original dressing calls for Ranch Dressing, original. I just like the extra zing that the peppercorn dressing adds.
