Ingredients
- SALAD
- 1 pound carrots, peeled
- 1/2 cup sultana raisins
- 1/3 cup slivered almonds, toasted
- 1 large green onion, finely chopped
- 2 tablespoons parsley, finely chopped
- VINAIGRETTE
- 2 tablespoons grapeseed oil
- 1 tablespoon extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon freshly squeezed orange juice
- 1 heaping tablespoon Dijon mustard
- 1 tablespoon honey
- 1/4 teaspoon hot paprika, or to taste
- 1/4 teaspoon ground Himalayan pink salt
- 1/4 teaspoon freshly ground black pepper (I always use mixed peppercorns)
How To Make classic french carrot salad

Step 1To make the salad, shred the carrots using the food processor with the shredding disc.

Step 2Transfer the shredded carrots to a large bowl. Add the raisins, slivered almonds and green onion. Toss and set aside.

Step 3To make the vinaigrette, add all ingredients to a measuring cup. Whisk until nicely blended; taste and adjust seasonings if needed.

Step 4Pour the vinaigrette over the salad and toss until nicely coated.

Step 5Sprinkle on parsley before transferring to the fridge for at least 30 minutes before serving.
