chinese spinach salad
Adapted this recipe from one for cooked spinach that was in our local paper years ago. The dressing is easily doubled. Water chestnuts are a bit bland. To give them a flavor boost, I marinate them in a little of the dressing for 15 - 20 minutes.

Ingredients
- - fresh spinach leaves
- - mushrooms, sliced thin
- - onion, sliced thin
- - tomato, diced
- - toasted slivered almonds
- 1/2 cup water chestnuts, sliced (i like them slivered)
- DRESSING
- 4 tablespoons vegetable oil
- 1-2 teaspoon sugar
- 4 tablespoons soy sauce or tamari
- 4 tablespoons onion, small diced
How To Make chinese spinach salad

Step 1Place ingredients for the dressing in a microwave safe, one cup measure. Heat in the microwave 20 - 30 seconds; just until warm. Whisk together.

Step 2Place water chestnuts in a small bowl. Drizzle on enough dressing to coat. Let stand 15 - 20 minutes

Step 3Divide spinach, mushrooms, onion slices, and tomato between 2 salad plates. Add water chestnuts. Whisk dressing, drizzle over salad and garnish with toasted slivered almonds.
