Chinese Spinach Salad

Adapted this recipe from one for cooked spinach that was in our local paper years ago. The dressing is easily doubled.

Water chestnuts are a bit bland. To give them a flavor boost, I marinate them in a little of the dressing for 15 - 20 minutes.

  • ·
    fresh spinach leaves
  • ·
    mushrooms, sliced thin
  • ·
    onion, sliced thin
  • ·
    tomato, diced
  • ·
    toasted slivered almonds
  • 1/2 c
    water chestnuts, sliced (i like them slivered)

  • 4 Tbsp
    vegetable oil
  • 1-2 tsp
  • 4 Tbsp
    soy sauce or tamari
  • 4 Tbsp
    onion, small diced

How to Make Chinese Spinach Salad


  1. Place ingredients for the dressing in a microwave safe, one cup measure. Heat in the microwave 20 - 30 seconds; just until warm. Whisk together.
  2. Place water chestnuts in a small bowl. Drizzle on enough dressing to coat. Let stand 15 - 20 minutes
  3. Divide spinach, mushrooms, onion slices, and tomato between 2 salad plates. Add water chestnuts. Whisk dressing, drizzle over salad and garnish with toasted slivered almonds.
