Ingredients

  • DRESSING:
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons soy sauce
  • 1 1/2 tablespoons rice vinegar, unseasoned
  • 3 cloves garlic, finely minced
  • 1/2 teaspoon chili oil (to taste)
  • SALAD:
  • 2 english cucumbers
  • 2 teaspoons sesame seeds, toasted
  • 1/4 cup cilantro, minced

How To Make chinese smashed cucumbers with chili and sesame oi

  • Step 1
    In a small bowl, combine all dressing ingredients Stir until sugar and salt are fully dissolved. Taste and adjust chili oil to your liking. Set aside.
  • Step 2
    Note: if you don't have chili oil, you can use red pepper flakes. Add to your taste.
  • Step 3
    Wash the cucumbers very well, using vegetable wash if you have it. Dry them well. Cut them into pieces about 4-5 inches long.
  • Step 4
    Place a piece of cucumber on a cutting board. Lay a large knife flat against it. Holding the knife securely with one hand, use your other hand to smash it lightly. The cucumber should crack open. Cut into large bite sized pieces and add to a large bowl. Repeat with remaining pieces.
  • Step 5
    Note: some like to lightly salt the smashed cucumbers and let them sit for about 20 minutes in a strainer so they shed liquid. After 20 minutes, press remaining liquid out with your hand and continue the recipe.
  • Step 6
    Add the salad dressing to the bowl and toss to combine. Serve garnished with the toasted sesame seeds and chopped cilantro.
