I had this one time at a baby shower I attended.I fell in love with my first bite. I loved the favors but couldn't pin point what a certain flavor was...I asked the person that made it and she said that flavor was mint! This is a favorite of mine now. It is light and refreshing!

    ripe cherry tomatoes, halved
  • 1/4 tsp
  • 1/2 tsp
  • 1 clove
    garlic, minced or pressed
  • 1
    shallot (green onion)chopped fine, including green part
  • dash(es)
    ground black pepper
  • 3 sprig(s)
    fresh mint leaves, chopped fine
  • 1 Tbsp
    red wine vinegar
  • 2 Tbsp
    extra virgin olive oil

How to Make Cherry Tomato Salad


  1. combine halved tomatoes, salt, sugar,black pepper,shallot,garlic and mint leaves. Toss to combine.
    In a separate bowl, mix the red wine winegar,olive oil and pour over tomatoes. Toss everything once again, cover with plastic wrap and refrigerate to let flavors blend for an hour or so, til chilled. Toss salad one more time before serving.
