cauliflower salad

This is another of the recipes I made when we were in Eagle River at the cottage. It is easy to make, and we all enjoyed it. I may take this to camp, providing I have space to keep it cold overnight. It is a great accompanying side dish to about anything over the grill or campfire!

Ingredients

  • 1 - head cauliflower, cut into small pieces
  • 2-3 bunches green onions, chopped
  • 3 medium tomatoes, cut up
  • 2 cups mayo
  • 1 pound turkey bacon, fried extra crisp
  • 2 cups shredded mild cheddar

How To Make cauliflower salad

  • Step 1
    In large bowl, layer in the following order: cauliflower, onion, then tomatoes. Spread mayo on top. You can use more if needed. Crumble bacon on top of the mayo. Then top with cheese. DO NOT MIX. Cover and refrigerate overnight. Stir and mix well just before serving.
