Found this recipe years ago. It is colorful and very good. It goes well with Mexican or Italian food. I like to serve it in a glass bowl.

Ingredients
- 4 cups sliced cauliflower
- 1 cup ripe olives, chopped
- 2/3 cup green pepper, chopped
- 1/2 cup chopped pimiento, drained
- 1/2 cup onion, chopped
- DRESSING
- 1/2 cup olive oil or oil of your choice
- 3 tablespoons lemon juice, fresh
- 3 tablespoons wine vinegar of your choice, but i like red
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
How To Make cauliflower salad

Step 1Mix vegetables all together in a very large bowl. Set aside.

Step 2Put dressing ingredients in a blender and mix well.

Step 3Pour dressing over vegetables and marinate overnight. Toss before serving.
