Found this recipe years ago. It is colorful and very good. It goes well with Mexican or Italian food. I like to serve it in a glass bowl.

Ingredients

  • 4 cups sliced cauliflower
  • 1 cup ripe olives, chopped
  • 2/3 cup green pepper, chopped
  • 1/2 cup chopped pimiento, drained
  • 1/2 cup onion, chopped
  • DRESSING
  • 1/2 cup olive oil or oil of your choice
  • 3 tablespoons lemon juice, fresh
  • 3 tablespoons wine vinegar of your choice, but i like red
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper

How To Make cauliflower salad

  • Step 1
    Mix vegetables all together in a very large bowl. Set aside.
  • Step 2
    Put dressing ingredients in a blender and mix well.
  • Step 3
    Pour dressing over vegetables and marinate overnight. Toss before serving.
