Carrot Slaw with Cashews
serrano chile, seeded and minced
cashew pieces, toasted
1Place carrots in a colander.
2Pour boiling water over them and drain well.
3Combine chile, lime juice and maple syrup in a bowl and whisk with a fork.
4Add carrots, cashews and cilantro and toss to mix.
5Serve at room temperature or chilled.
