Loved the name of this recipe, and when you read the ingredients, it makes sense. My mother in law loves carrot salad, and I am always looking for carrots in the mix. I cook in camp often, for a large group of people. This recipe sounds super easy and very unique. I found it on a recipe app on my computer under Food for 50.

  • 72 oz
    carrots, shredded
  • 44 oz
    pineapple tidbits, drained
  • 8 oz
    flaked coconut
  • 9 oz
    mini marshmallows
  • 2 1/4 c
  • 3/4 c
    light cream (half and half)
  • 8 oz
    raisins, optional

How to Make Carrifruit Salad (Food for 50)


  1. 1. Combine ingredients. Mix lightly.

    2. Mix mayonnaise and cream. Add to salad ingredients. Mix carefully. Serve with No. 12 dipper.
  2. Best when served the same day it is prepared.
