Loved the name of this recipe, and when you read the ingredients, it makes sense. My mother in law loves carrot salad, and I am always looking for carrots in the mix. - 44 ounces pineapple tidbits, drained
- 8 ounces flaked coconut
- 9 ounces mini marshmallows
- 2 1/4 cups mayo
- 3/4 cup light cream (half and half)
- 8 ounces raisins, optional
