Loved the name of this recipe, and when you read the ingredients, it makes sense. My mother in law loves carrot salad, and I am always looking for carrots in the mix. I cook in camp often, for a large group of people. This recipe sounds super easy and very unique. I found it on a recipe app on my computer under Food for 50.

Ingredients

  • 72 ounces carrots, shredded
  • 44 ounces pineapple tidbits, drained
  • 8 ounces flaked coconut
  • 9 ounces mini marshmallows
  • 2 1/4 cups mayo
  • 3/4 cup light cream (half and half)
  • 8 ounces raisins, optional

How To Make carrifruit salad (food for 50)

  • Step 1
    1. Combine ingredients. Mix lightly. 2. Mix mayonnaise and cream. Add to salad ingredients. Mix carefully. Serve with No. 12 dipper.

    Best when served the same day it is prepared.
