Barb made this yummy salad when we were at the cottage, but took it up a notch with the brown tomatoes. It is well worth a trip to Trader Joes's for them! We had them in July of 2018 when we went to visit, and my hubby loved it!

Ingredients For caprese salad, barb's

  • brown tomatoes, from trader joes (see notes)
  • fresh basil leaves, whole
  • buffalo mozzarella slices
  • even amounts of lemon juice and olive oil, 1/2 each
  • fresh ground black pepper, optional

How To Make caprese salad, barb's

  • 1
    Slice the tomatoes and put onto your salad plate. Top with whole leaves of basil, and a slice of mozzarella on top. Mix the lemon juice and olive oil evenly, so it is half of each, and 'dress' the salad. If desired, grind some fresh black pepper on top.

    We serve these on individual salad plates, but you could easily make a large salad and serve family style if you want!

    Note: Barb gets the brown tomatoes from Trader Joes because she says she can't find nicely flavored red tomatoes in NC. I absolutely love the brown tomatoes! Note: I just did a search for brown tomatoes, and they are apparently also known as KUMATO tomatoes, and it says Kroger carries them...
