I love rice noodle salads. The noodles are chewy, and everything is so fresh.

Ingredients

  • 8 ounces rice noodles
  • 1 pound shrimp, peeled and deveined
  • 1 English cucumber, peeled and cut into half moons.
  • 1 medium shallot, chopped
  • 1 cup crushed peanuts
  • 6 tablespoons lime juice
  • 2 teaspoons chili crisp
  • 3 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • basil, for garnish

How To Make cambodian style rice noodle salad with shrimp

  • Step 1
    Place a pot of water on the stove and bring to a boil. Add the noodles and cook for 5 minutes.
  • Step 2
    Add the shrimp and cook 3 more minutes. Drain and place on ice to stop the cooking.
  • Step 3
    Remove the shrimp and chop them into pieces. Cut the noodles into smaller lengths.
  • Step 4
    Place the noodles on the plates. Top with the shrimp, shallots, cucumber, and peanuts in that order.
  • Step 5
    Mix the lime juice, chili crisp, fish sauce, and brown sugar. Pour over the salad and garnish with basil.
