  • 1 pint Brussels sprouts, shredded on a mandolin
  • 1 cup fresh spinach, torn into bite size pieces.
  • 4 - anchovy fillets
  • 1 clove garlic, minced
  • 2 teaspoons grainy mustard
  • 1 teaspoon paprika
  • 1/2 cup olive oil
  • 1 - lemon, juiced
  • - salt, to taste
  • 1/2 cup shredded Parmesan cheese

How To Make brussels sprouts salad with anchovy dressing

  • Step 1
    Place the Brussels and spinach in a bowl.
  • Step 2
    Smash the garlic and anchovies in a mortar and pestle.
  • Step 3
    Mix with the lemon juice, grainy mustard, and paprika. Add the olive oil and emulsify it into a sauce.
  • Step 4
    Pour the dressing over the Brussels mixture. Plate and top with cheese.
