- 1 cup fresh spinach, torn into bite size pieces.
- 4 - anchovy fillets
- 1 clove garlic, minced
- 2 teaspoons grainy mustard
- 1 teaspoon paprika
- 1/2 cup olive oil
- 1 - lemon, juiced
- - salt, to taste
- 1/2 cup shredded Parmesan cheese
How To Make brussels sprouts salad with anchovy dressing

Step 1Place the Brussels and spinach in a bowl.

Step 2Smash the garlic and anchovies in a mortar and pestle.

Step 3Mix with the lemon juice, grainy mustard, and paprika. Add the olive oil and emulsify it into a sauce.
