brown rice and edamame salad
Green onions, spring onions and scallions are all the same thing in my mind. Whatever you call them, they add a nice touch to this Asian style salad. Add time to the recipe if your edamame and rice is not pre-cooked!

Ingredients
- 1 cup edamame, shelled, cooked and cooled
- 3 cups brown rice, cooked and cooled
- 3 red radishes, sliced
- 2 green onions, sliced
- 1/4 cup cilantro, minced, plus a few sprigs for garnish
- DRESSING
- 1/4 cup rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon sesame oil, optional
- salt and pepper, to taste
How To Make brown rice and edamame salad

Step 1Toss edamame, rice, radish, onions and cilantro in a bowl.

Step 2Whisk together dressing ingredients and gently fold into salad.
