broccoli shrimp salad
This is a recipe I got several years ago. I thought it was one my mother made, but my sister doesn't remember it at all, so I must have got it from someone when I was in college. It is a favorite of mine and I hope you enjoy it.

Ingredients
- 6 cups broccoli, cut in smallish pieces (you can use both stems and florets)
- 1-2 can small to medium shrimp
- 1 can water chestnuts, sliced
- 1 - sweet onion, chopped
- 1 cup mayonnaise
- - salt and pepper to taste
How To Make broccoli shrimp salad

Step 1You can use the quantity of broccoli that you would like, this recipe is pretty flexible.

Step 2You can use the broccoli raw, but I prefer to blanch it. To blanch the broccoli bring a pot of salted water to a boil. Place the broccoli in the water making sure all broccoli is under water and leave for only 1 minute. Then drain the water from the broccoli and put in ice water to stop the cooking.

Step 3Put the broccoli in a bowl and add the chopped onion, shrimp that has been rinsed, water chestnuts (rinsed), and mayonnaise. Stir together and add salt and pepper to taste.
