I had something similar at a potluck once and it was delicious!

Ingredients

  • 1 (16 oz) package broccoli slaw mix
  • 1 cup shredded carrots (optional)
  • 1 (3 oz) package ramen noodles
  • 6 green onions, chopped white and green parts
  • 1/2 cup sunflower seeds
  • 1/4 cup almonds, slivered or chopped
  • 1/4 cup craisins or golden raisins (optional)
  • 2 tablespoons canola oil or olive oil
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar (or 2 packets equal/ stevia)
  • 1/4 cup cider vinegar
  • 1 tablespoon soy sauce

How To Make broccoli-ramen salad

  • Step 1
    Break ramen noodles, discard packet of seasoning. Mix slaw, noodles, green onions, carrots, almonds and seeds in large bowl. Add raisins, if using.
  • Step 2
    Mix the dressing ingredients together in a small bowl and pour over slaw mixture.
  • Step 3
    Stir together well, cover and refrigerate over night or at least 8 hours.
  • Step 4
    NOTE: Some versions of this recipe use the seasoning packet from the ramen. I prefer not to and adjust the seasoning accordingly by adding the soy sauce.
