Ingredients
- 3 baby bok choy, chopped
- 1 tablespoon olive oil
- 1/2 fresno chili, seeded and minced
- garlic
- 6 scallions, chopped and white and green parts separated
- crushed peanuts, for garnish
- DRESSING
- 2 tablespoons fish sauce
- 2 tablespoons fresh lime juice
- 2 tablespoons honey
- 1 cup coconut cream
How To Make bok choy salad with coconut honey lime dressing

Step 1Boil a pot of water and add some salt. Once boiling, add the bok choy. Stir twice then drain. Set aside.

Step 2In a wok, add the oil and stir fry the chilies for 2 minutes. Transfer with a slotted spoon to a plate. Add the garlic and stir fry about 1 minute. Transfer to the plate with the chilies. Add the white parts of the scallions and stir fry 2 minutes.

Step 3Add the green parts of the scallions and stir fry 1 more minute. Add to the bok choy and stir.

Step 4Mix the ingredients together for the dressing and pour over the bok choy salad.

Step 5Mix well and garnish with nuts.
