Ingredients

  • 3 baby bok choy, chopped
  • 1 tablespoon olive oil
  • 1/2 fresno chili, seeded and minced
  • garlic
  • 6 scallions, chopped and white and green parts separated
  • crushed peanuts, for garnish
  • DRESSING
  • 2 tablespoons fish sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 cup coconut cream

How To Make bok choy salad with coconut honey lime dressing

  • Step 1
    Boil a pot of water and add some salt. Once boiling, add the bok choy. Stir twice then drain. Set aside.
  • Step 2
    In a wok, add the oil and stir fry the chilies for 2 minutes. Transfer with a slotted spoon to a plate. Add the garlic and stir fry about 1 minute. Transfer to the plate with the chilies. Add the white parts of the scallions and stir fry 2 minutes.
  • Step 3
    Add the green parts of the scallions and stir fry 1 more minute. Add to the bok choy and stir.
  • Step 4
    Mix the ingredients together for the dressing and pour over the bok choy salad.
  • Step 5
    Mix well and garnish with nuts.
