Ingredients
- BLACKENED SALMON
- 2 salmon filets (6 oz each)
- 2 teaspoons ancho chili powder
- 1 teaspoon ground ginger
- 1/2 tablespoon black sesame seeds
- 1/2 tablespoon sesame seeds
- 1 teaspoon salt
- 1 tablespoon lime juice
- 2 teaspoons chili garlic sauce
- GLASS NOODLE SALAD
- 2 ounces glass noodles
- salt
- 1 tablespoon olive oil
- 1/2 cup diced mango
- 1/4 cup green apple slices
- 2 tablespoons cilantro, chopped
- 2 tablespoons scallion, chopped
- DRESSING
- 2 tablespoons lime juice
- 1 tablespoon mirin
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon sweet soy sauce
How To Make blackened salmon with glass noodle salad

Step 1For the salmon. Mix the seasoning together in one dish. Mix the lime juice and chili garlic paste together in another dish. Set aside

Step 2Place a pan of salted water on the stove. Once it's boiling, cook the noodles for about 3 minutes. Drain and run under cold water. Mix in the olive oil and mound in a bowl. Add the diced mango, apple slices, and chopped cilantro.

Step 3Mix the ingredients for the dressing together in a bowl.

Step 4Dip one side of the salmon in the lime mixture, then dredge it in the spice mixture. Add oil to a cast iron pan and once it's smoking, add the salmon, dredged side down, and sear for about 4 minutes. Turn the salmon and cook on the other side until the salmon is cooked. About 5 minutes.

Step 5Top the salad with the salmon, pour the dressing over the salad, and garnish with the scallions.
