My Mother maid this when I was growing up. She would pick the peppers when they were small, (about the size of an egg) and stuff them with this salad. One of my favorites.

Ingredients For bell pepper salad

  • 1 lg
    sweet bell pepper
  • 1 lg
    tomato
  • 3 md
    spring onions or small valdalia
  • 1/2 c
    shredded velvetta or american processed cheese
  • 1 tsp
    miracle whip or salad dressing

How To Make bell pepper salad

  • 1
    Dice peppers, tomatoes and onion into small pieces and mix together in a bowl.

    Shred velvetta cheese. I do this a little at a time and fold into the salad to keep the pieces separated. If you use the slices, cut into small strips.

    Add the salad dressing. It can be stuffed into small peppers or tomatoes,(optional)
