Did you know that Avocados have 18 essential amino acids, are filled with a beneficial fat, have carotenoids usually associated with red and orange produce, have anti-inflammatory benefits and are good for your heart? I am sure my mom didn't know that when she passed her love of avocados to her kids. She would make an avocado salad for our lunch when we were at home. So good and now I know so good for you.

Ingredients
- 3 - avocados
- 3 cups cottage cheese, small curd
- 6 tablespoons catalina dressing
- - kosher salt to taste
- - fresh lemon or lime juice to taste
How To Make avocado salad

Step 1Cut avocados in half and remove pit. Carefully remove the skin keeping the avocado in one piece.

Step 2Sprinkle with kosher salt and a little lemon or lime juice. Add a 1/2 cup of cottage cheese with an ice cream scoop to the center of the avocado. Drizzle with 1 tablespoon of Catalina Dressing and serve.
