avocado and crab salad
Found this last summer, just got around to playing with it. Makes a very yummy light lunch with a friend.

Ingredients
- 1 large avocado
- 4 ounces white crab meat, drained
- 2 tablespoons red onion, chopped
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh parsley or cilantro
- 2 - grape tomatoes, diced
- 1/2 teaspoon olive oil
- 1/4 teaspoon salt and pepper (each)
- 2 - leaves lettuce of choice (optional)
How To Make avocado and crab salad

Step 1In a medium bowl, combine onion, lime juice, parsley (or cilantro), tomato, olive oil, 1/8 tsp salt and the pepper or to taste. Add crab meat and gently toss.

Step 2Cut avocado in half, lengthwise, remove pit and peel off skin. Season with remaining salt. Fill the avocado halves equally with crab mixture. Place on lettuce (if you wish) and serve.
