avocado and crab salad
Found this last summer, just got around to playing with it. Makes a very yummy light lunch with a friend.

Ingredients For avocado and crab salad

1 lgavocado
-
4 ozwhite crab meat, drained

2 Tbspred onion, chopped

1 Tbspfresh lime juice
-
1 Tbspchopped fresh parsley or cilantro

2grape tomatoes, diced
-
1/2 tspolive oil
-
1/4 tspsalt and pepper (each)

2leaves lettuce of choice (optional)
How To Make avocado and crab salad

1In a medium bowl, combine onion, lime juice, parsley (or cilantro), tomato, olive oil, 1/8 tsp salt and the pepper or to taste. Add crab meat and gently toss.

2Cut avocado in half, lengthwise, remove pit and peel off skin. Season with remaining salt. Fill the avocado halves equally with crab mixture. Place on lettuce (if you wish) and serve.
