Artichoke Rice Salad

3 c
cooked rice
12 oz
marinated artichoke hearts, drained, chopped - reserve 4 ounces
1 c
mushrooms, sliced
1/2 c
red bell pepper, seeded and chopped
1/4 c
parmesan cheese, grated
1/3 tsp
white pepper
1.5 Tbsp
white wine vinegar
lettuce leaves
1/2 c
green onions, chopped


1Combine hot rice, artichoke hearts, mushrooms, onions, cheese and pepper.
2Combine reserved liquid from artichokes and vinegar; shake to combine.
3Drizzle over salad.
4Spoon into individual lettuce-lined salad plates.
