- 12 ounces marinated artichoke hearts, drained, chopped - reserve 4 ounces
- 1 cup mushrooms, sliced
- 1/2 cup red bell pepper, seeded and chopped
- 1/4 cup parmesan cheese, grated
- 1/3 teaspoon white pepper
- 1.5 tablespoons white wine vinegar
- - lettuce leaves
- 1/2 cup green onions, chopped
How To Make artichoke rice salad

Step 1Combine hot rice, artichoke hearts, mushrooms, onions, cheese and pepper.

Step 2Combine reserved liquid from artichokes and vinegar; shake to combine.

Step 3Drizzle over salad.

Step 4Spoon into individual lettuce-lined salad plates.
