Ingredients

  • 3 cups cooked rice
  • 12 ounces marinated artichoke hearts, drained, chopped - reserve 4 ounces
  • 1 cup mushrooms, sliced
  • 1/2 cup red bell pepper, seeded and chopped
  • 1/4 cup parmesan cheese, grated
  • 1/3 teaspoon white pepper
  • 1.5 tablespoons white wine vinegar
  • - lettuce leaves
  • 1/2 cup green onions, chopped

How To Make artichoke rice salad

  • Step 1
    Combine hot rice, artichoke hearts, mushrooms, onions, cheese and pepper.
  • Step 2
    Combine reserved liquid from artichokes and vinegar; shake to combine.
  • Step 3
    Drizzle over salad.
  • Step 4
    Spoon into individual lettuce-lined salad plates.
