amish egg & olive salad

This is a wonderful and delicious egg salad recipe that comes from one of my Amish cookbooks.

Ingredients

  • 6 - hard-cooked eggs, cooled and peeled
  • 1/4 teaspoon salt
  • 1 dash black pepper
  • 1/4 cup mayonnaise (i was out of mayo, so i used miracle whip; either is fine)
  • 1 to 2 tablespoons chopped green olives with pimentos
  • 1 to 2 teaspoons prepared mustard (i used dijon mustard; my favorite kind!)

How To Make amish egg & olive salad

  • Step 1
    Chop eggs into small chunks.
  • Step 2
    Fold in remaining ingredients and chill.
  • Step 3
    Serve on bread or rolls with lettuce leaves (or can be served as a side dish).
