Amish Egg & Olive Salad

This is a wonderful and delicious egg salad recipe that comes from one of my Amish cookbooks.

  • 6
    hard-cooked eggs, cooled and peeled
  • 1/4 tsp
  • 1 dash(es)
    black pepper
  • 1/4 c
    mayonnaise (i was out of mayo, so i used miracle whip; either is fine)
  • 1 to 2 Tbsp
    chopped green olives with pimentos
  • 1 to 2 tsp
    prepared mustard (i used dijon mustard; my favorite kind!)

How to Make Amish Egg & Olive Salad


  1. Chop eggs into small chunks.
  2. Fold in remaining ingredients and chill.
  3. Serve on bread or rolls with lettuce leaves (or can be served as a side dish).
