amish egg & olive salad
This is a wonderful and delicious egg salad recipe that comes from one of my Amish cookbooks.

Ingredients
- 6 - hard-cooked eggs, cooled and peeled
- 1/4 teaspoon salt
- 1 dash black pepper
- 1/4 cup mayonnaise (i was out of mayo, so i used miracle whip; either is fine)
- 1 to 2 tablespoons chopped green olives with pimentos
- 1 to 2 teaspoons prepared mustard (i used dijon mustard; my favorite kind!)
How To Make amish egg & olive salad

Step 1Chop eggs into small chunks.

Step 2Fold in remaining ingredients and chill.

Step 3Serve on bread or rolls with lettuce leaves (or can be served as a side dish).
