pineapple party salad

This recipe was my grandmothers and she made it for every family gathering we had. I've been making it for the 55 years I've been married and now our girl make it for their families. Note: you may substitute shredded cheddar in place of the cottage cheese. This recipe also works well using sugar free jello and reduced or fat free cottage cheese and salad dressing.

Ingredients

  • small package lime jello
  • small package lemon jello
  • 20 oz cans crushed pineapple, drain & reserve juice
  • 1 cup cottage cheese, small curd
  • 1 cup salad dressing or mayonaise
  • 1/2 cup pecans, finely chopped
  • 2 cups water, boiling
  • 3/4 cup pineapple juice, add enough water to make 3/4 cup

How To Make pineapple party salad

  • Step 1
    In a large bowl dissolve both packages of jello in boiling water,stir to dissolve well. Add the pineapple juice, cool to room temperature.
  • Step 2
    When jello is at room temperature whisk in the salad dressing until smooth. Refrigerate until slightly thickened, about one hour.
  • Step 3
    Fold in pineapple, cottage cheese and pecans. Chill 4 hours or longer.
