This was one of those old recipes that Mom's ingredients don't have an 'exact' translation of in today's vernacular. I assume the dessert mix is jello, but perhaps even a pudding would work?

Ingredients
- 3 1/2 ounces lemon flavor dessert mix
- 1 cup low calorie ginger ale
- 2 tablespoons lemon juice
- 1/2 teaspoon grated lemon rind
- 1/2 cup cottage cheese, sieved
How To Make low-cal lemon splurge, mom's

Step 1Blend lemon dessert mix with 1/2 the ginger ale in small bowl on low speed of electric mixer. Beat on high 1 min. Add remaining ginger ale at low speed, then high for 2 min. Fold in remaining ingredients. Spoon into 4 individual 4 oz molds. Chill until firmly set. Garnish with fresh mint if desired.
