Lime Pear Delight

Judy Brennan

This recipe was my mother's. I actually call it my interchangeable jello recipe because I found not only can I use the original lime jello and canned pears, but I've also made it using peach jello and canned peaches, strawberry jello and frozen strawberries in syrup, and raspberry jello and frozen raspberries in syrup.

I don't use a mold. I just pour it into a clear plastic bowl with a cover that I can store in the refrigerator.

I also like nuts in my jello and always add some chopped walnuts to it.

How to Make Lime Pear Delight

  1. Dissolve 1 package lime jello in 1 cup hot pear juice. (Strain juice from canned pears and add enough water to juice to make one cup.) Juice can be heated in a glass measuring cup in the microwave.
  2. Puree the pears in blender. Add pureed pears to the softened cream cheese and blend to a smooth consistency using a mixer. Stir into jello.
  3. Whip the one cup heavy cream and fold into the jello mixture. Pour into mold, chill till firm, and unmold.
