I can't take credit for this recipe because it was one that was passed on to me by a coworker. However, I, my friends and family LOVE it so I thought I'd share.

Ingredients
- 1 box lemon gelatin, 3 oz size
- 1 cup boiling water
- 1/2 cup sugar
- 1 small whipped topping, 8 oz.
- 1 small pimento cheese spread
- 1 small crushed pineapple, drained
- 1 cup chopped nuts (optional)
How To Make lemon pimento cheese congealed salad

Step 1Dissolve gelatin in boiling water.

Step 2Add sugar and pimento cheese.

Step 3Mix well.

Step 4Add pineapple.

Step 5Partially congeal.

Step 6Fold in whipped topping and nuts, if desired.

Step 7Chill until set.
