This is a jello salad my Grandmother Meyers made often and then my mother made it often and I have made it often, and usually always we have made it for potlucks and rarely have brought any of it home....We grew up calling it Fern salad. After my mother passed away I had been given a hand written cookbook of my grandmother's and discovered the recipe written in her book with the name "Fern's Salad". It must have been a friend of her's who had given her the recipe.

Ingredients

  • 1 package 3 oz. lemon gelatin
  • 1 cup boiling water
  • 8 large marshallows chopped (1 cup mini marshmallows)
  • 1 can crushd pineapple (drain and reserve juice)
  • 1 cup cold water
  • 1 cup pineapple juice (drained from canned pineapple)
  • !/2 cup sugar
  • 2 tablespoons flour
  • 2 tablespoons butter, room temperature
  • 1 - egg (well beaten)
  • 1 package dream whip
  • - amount of milk needed for dream whip
  • 2-4 tablespoons chopped walnuts
  • 2 - bananas (peeled and thinly sliced

How To Make fern's salad

  • Step 1
    Dissolve gelatin in boiling water.
  • Step 2
    Immediately add marshmallows and stir until all are dissolved.
  • Step 3
    Add cold water and then bananas and pineapple and chill in serving dish.
  • Step 4
    Mix flour and sugar together. Add pineapple juice and butter. Heat on low heat stirring constantly, until bubbling and thick.
  • Step 5
    Slowly add hot pudding to beaten egg teaspoon at a time, beating well with each addition.
  • Step 6
    Return pudding and egg mixture to heat and bring to a boil stirring constantly. Boil one minute. Set in refrigerator to cool.
  • Step 7
    Make 1 pkg. of dream whip. Fold cooled pineapple pudding into the dream whip. Spread on top of firm Gelatin and fruit. Sprinkle top with chopped walnuts. Chill until serving.
