Ingredients

  • 1 small box
    sugar free lemon jello
  • 1 small box
    sugar free lime jello
  • 1/2 pt
    heavy cream, whipped
  • 1, 8 oz pkg
    cream cheese, room temperature
  • 1, 8 oz can(s)
    crushed pineapple
  • 2 c
    hot water, divided

How to Make Bunyan's Diabetic Lemon Lime Jello Salad/Dessert

Step-by-Step

  1. FOR THE BASE:
  2. In a bowl, dissolve the lemon Jello completely in 1 cup of hot water
  3. Set in the fridge to set up 2/3 of the way
  4. Using a hand mixer, beat the heavy cream to soft peaks in a bowl and set it in the fridge
  5. Beat the cream cheese in a bowl until light and fluffy
  6. Add the whipped cream to the cream cheese, and pour in the 2/3 set up lemon jello, whip until creamy
  7. Pour into an 8" X 8" glass pan and put it back in the fridge to set up completely
  8. FOR THE TOP:
  9. Dissolve the lime Jello completely in 1 cup of hot water
  10. Add the crushed pineapple and stir to combine
  11. Set the lime Jello in the fridge to set up 1/2 way
  12. Pour the 1/2 set lime Jello over the completely set lemon Jello, spread it out evenly
  13. Put it back in the fridge for at least 2 hours or until completely set
  14. Bon Appetit!
