This is such a wonderfully refreshing side dish or dessert. Makes all of the freshness of summer POP. Serve with all the trimmings for a wonderful holday dinner or a good old fashioned fried chicken picnic

Ingredients

  • 1 pkg
    small, cherry jello
  • 2 c
    boiling water
  • 1 can(s)
    15 oz blueberries in heavy syrup undrained. not blueberry pie filling
  • 1 pkg
    8 oz cream cheese softened
  • 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 1 c
    sour cream
  • 1/2 c
    chopped pecans

How to Make BLUEBERRY GELATIN SALAD

Step-by-Step

  1. In a bowl, dissolve gelatin in boiling water; stir in blueberries.
    Pour into a 9x13" glass baking dish
    Chill until set
  2. In a medium mixing bowl, beat cream cheese and sugar until smooth.
    Add vanilla and sour cream; mix well. Spread over the gelatin layer; sprinkle with pecans.
    Chill several hours to overnight
    Yields 10 to 12 servings
