This is one of Mom's recipes that I added into the Head Start cookbook I compiled for a fundraiser. Not surprisingly, I had not gotten many entries for salads or anything with fruit!

Ingredients

  • 2 cups water
  • 1 cup apricot juice or pineapple juice
  • 2 packages orange jello
  • 1 can apricots (i substitue peaches)
  • 1 cup miniature marshmallows
  • 1 can crushed pineapple
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 cup fruit juice
  • 1 tablespoon lemon juice
  • 1/2 cup sugar
  • 1 - egg, beaten
  • 1 pinch salt
  • 1 - container cool whip lite
  • 1 package grated cheddar cheese

How To Make apricot salad, mom's

  • Step 1
    Mix water, juice, jello, apricots, marshmallows and pineapple and put into a 9x13. Cook remaining ingredients except cool whip and cheese, when thickened, combine with gelatin and thicken completely. When ready to serve, spread with cool whip and sprinkle with cheese. Cut into squares and serve.
