Yummy Honey & Baked Garlic Balsamic Dressing

This dressing is totally addictive. There are only a few ingredients, and it’s easy/peasy to make. And the good new is, you probably have all the stuff you need just sitting in your pantry.

If you’ve never used baked garlic before in a dressing, you’ll love how it creates a deep mellow taste, so much different than using raw garlic.

So, you ready… Let’s get into the kitchen.

1 Tbsp
fresh clover honey
1 Tbsp
dijon mustard, i prefer grey poupon
4 Tbsp
balsamic vinegar
2 clove
garlic, baked, and mashed
1/2 c
olive oil, extra virgin
salt, kosher variety, to taste
black pepper, freshly ground, to taste


2Gather your ingredients.
3Chef's Note: I used a balsamic vinegar infused with blueberries... A marriage made in heaven.
4Place a rack in the middle position, and preheat the oven to 325f (165c).
5Place the garlic on a piece of parchment paper, and drizzle a bit olive oil on top.
6Pull the parchment paper together, and twist together at the top.
7Place in the preheated oven for 20 minutes.
8Remove from the oven and allow the garlic to cool.
9Sprinkle with a bit of salt, and then mash with the flat side of a kitchen, or santoku knife.
10Add the honey, vinegar, garlic, and mustard to a medium bowl.
11Whisk to combine the ingredients.
12Slowly add the olive oil, and continue to whisk until all the oil has been added, and it forms an emulsion.
13Season with a bit of salt and pepper, to taste.
15This is an excellent dressing for a nice bed of salad greens. Enjoy.
