With Summer here it is time to get out my salad recipes. This is an easy one to prepare especially when I buy slices of cooked roast beef from the deli counter and add the greens and dressing..simple or what?????

Ingredients

  • 4 slices cooked roast beef about 1/4 inch thick
  • 3 tablespoons olive oil, extra virgin
  • - salt and pepper to taste
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon sugar
  • 1/4 teaspoon hot sauce {optional}
  • 1/2 - head romain leaves torn about 4 cups
  • 1/4 small red cabbage thinly sliced
  • 1 large carrot cut into matchstick pieces
  • 4 - radishes, halved and thinly sliced
  • 1/2 - english cucumber thinly sliced
  • 1/2 - red pepper cut into matchstick pieces
  • 1/4 pound snow peas
  • 1 cup dried cranberries
  • 1/2 cup chopped dry honey roasted peanuts
  • 1/4 cup fresh chopped coriander {optional or parsley}

    In a salad bowl combine all the vegetables and beef.
