Ingredients
- DRESSING
- 1/4 cup sun-dried tomatoes chopped
- 1/2 cup freshly grated Parmesan
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Kosher salt
- 1/2 cup olive oil
- SALAD
- 1/2 head romaine lettuce, chopped
- 1/4 cup sliced sun-dried tomatoes
- shaved Parmesan
- CROUTONS
- 3 tablespoons olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt
- 2 cups cubed rustic bread
How To Make sun-dried tomato caesar with parmesan croutons

Step 1For the dressing: In a food processor, combine all ingredients except olive oil. With the processor running, drizzle in the olive oil until it becomes a homogenous mixture. Set aside in the fridge.

Step 2For the croutons: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Mix the oil, Parmesan, and salt in a bowl. Add the bread cubes and mix well.

Step 3Place in the oven for 10 minutes, then stir and bake another 10 minutes.

Step 4To assemble the salad: Dress the romaine with the dressing and place it on a plate.

Step 5Top with sun-dried tomatoes, Parmesan cheese, and croutons.
