Ingredients

  • DRESSING
  • 1/4 cup sun-dried tomatoes chopped
  • 1/2 cup freshly grated Parmesan
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Kosher salt
  • 1/2 cup olive oil
  • SALAD
  • 1/2 head romaine lettuce, chopped
  • 1/4 cup sliced sun-dried tomatoes
  • shaved Parmesan
  • CROUTONS
  • 3 tablespoons olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 2 cups cubed rustic bread

How To Make sun-dried tomato caesar with parmesan croutons

  • Step 1
    For the dressing: In a food processor, combine all ingredients except olive oil. With the processor running, drizzle in the olive oil until it becomes a homogenous mixture. Set aside in the fridge.
  • Step 2
    For the croutons: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Mix the oil, Parmesan, and salt in a bowl. Add the bread cubes and mix well.
  • Step 3
    Place in the oven for 10 minutes, then stir and bake another 10 minutes.
  • Step 4
    To assemble the salad: Dress the romaine with the dressing and place it on a plate.
  • Step 5
    Top with sun-dried tomatoes, Parmesan cheese, and croutons.
